From Restriction to Celebration: The Sydney Restaurant Proving Gluten-Free Can Be Fine Dining


Sydney restaurant marks 10 years with a month-long celebration of artisan collaborations, from Amalfi-inspired desserts to handcrafted Calabrian cannoli

When The Botanica Vaucluse opened its doors a decade ago, the idea of a fully gluten-free fine dining destination was still relatively unfamiliar. In 2026, the Sydney restaurant is marking its 10th anniversary by celebrating how far gluten-free dining has evolved — with a month-long Italian-inspired festival showcasing some of the country’s leading gluten-free artisans.

Running throughout August, the anniversary program will see The Botanica transform its Vaucluse dining room into a celebration of Italian flavours, with collaborations inspired by Naples, Calabria and the Amalfi Coast.

The festivities come as the restaurant continues to champion a different approach to gluten-free dining: one focused on creativity, quality and indulgence rather than restriction.

“Ten years ago we opened The Botanica to challenge the idea that gluten-free dining meant compromising,” says Evette Moran, Co-Founder and Co-CEO of Mark Moran Group. “This anniversary is a celebration of how much the conversation has changed - gluten-free can be just as exciting, thoughtful and memorable as any other dining experience.”

A month-long celebration of Italian craftsmanship

Throughout August, guests can experience an exclusive Amalfi-inspired lemon tart created by acclaimed gluten-free pastry chef Sebastien Sans Gluten.

Drawing inspiration from Italy’s famous citrus-growing coastline, the dessert combines delicate pastry techniques with bright Amalfi-style flavours, showcasing the level of craftsmanship now possible within gluten-free patisserie.

The celebrations will continue on Saturday 8 August with a special collaboration from Calabrian pastry chef Daniele Barresi, founder of Eden Pasticceria. A handcrafted gluten-free cannoli tower will take centre stage, with every table of two or more guests receiving a complimentary cannolo as part of the anniversary celebrations.

The month of events follows the success of The Botanica’s Gluten-Free Pizza Night on Saturday 1 August, which sold out ahead of the festival — reflecting growing demand for elevated gluten-free dining experiences in Sydney.

Redefining what gluten-free dining can look like

At the heart of The Botanica’s offering is Executive Chef Abby James, whose experience includes working in some of Sydney’s most acclaimed kitchens, including Quay and Jonah’s.

Over the past decade, James and the team have built a menu designed to showcase seasonal produce and modern techniques, while maintaining The Botanica’s commitment to being entirely gluten free.

Earlier this year, the restaurant became one of Sydney’s few venues certified by Coeliac Australia, recognising its commitment to maintaining a fully gluten-free kitchen and dining experience.

Venue and Events Manager Sara Paganelli says the anniversary program was designed as a thank you to the community that has supported The Botanica over the past decade.

“We wanted the anniversary to feel like a journey through Italy, celebrating the incredible artisans who are helping redefine what’s possible in gluten-free dining,” she says.

From its garden-framed setting in Sydney’s east to its produce-driven menu, The Botanica Vaucluse continues to demonstrate that dietary requirements do not need to limit creativity — and that gluten-free dining can belong firmly within the fine dining conversation.
