Martha’s Is Turning Its Cult Cinnamon Scroll Into a Giant Cake

Candlelit Caramel Pastry Cake
Sydney’s favourite cinnamon scroll is getting a very big birthday upgrade.

There are few things better than a warm, sticky cinnamon scroll. Unless, of course, it’s a giant cinnamon scroll big enough to share.

To celebrate its first birthday, Sydney bakery Martha’s is supersizing the pastry that has helped turn the Wareemba bakery into a local cult favourite, transforming its signature cinnamon scroll into a Giant Cinnamon Scroll Cake made for sharing, celebrations and anyone with a serious sweet tooth.

And if the numbers are anything to go by, Sydney is going to be very interested.

In its first year, Martha’s has sold more than 17,000 cinnamon scrolls to its loyal and ever-growing following. That’s 17,000 reasons to believe the humble scroll has officially entered its main-character era.

Now, rather than marking its first birthday with a traditional cake, Martha’s has done what any self-respecting bakery would do: made the cinnamon scroll itself the cake.

Priced at $60, the limited-edition Giant Cinnamon Scroll Cake takes Martha’s signature pastry dough and layers it generously with warming cardamom and cinnamon before being finished with fragrant orange blossom icing.

And because there is no such thing as too much icing, each cake comes with extra on the side, ready to be warmed, poured and piled over the top just before serving.

“We wanted to celebrate our first year with something that felt unmistakably Martha’s – nostalgic, generous and a little bit unexpected,” says Paris Nassif, Owner of Martha’s.

“The cinnamon scroll has always been one of those flavours that people connect with, so we’ve taken it and turned it into something made for sharing. One year feels like a pretty big milestone, so naturally, the cake had to be big too.”

It’s a fitting celebration for a bakery that has built its identity around food designed to bring people together.

Tucked away on Great North Road in Sydney’s waterside suburb of Wareemba, Martha’s is known for its pastries, cakes, sandwiches and specialty coffee, with a menu that takes inspiration from Mediterranean flavours while keeping plenty of room for nostalgic bakery favourites. The cinnamon scroll is arguably its star player.

There’s something inherently comforting about the combination of buttery pastry, cinnamon and sugar, but Martha’s gives the classic a distinctive twist with cardamom and orange blossom. The result is familiar enough to feel nostalgic, but unexpected enough to keep you coming back for another one. Or, apparently, another 16,999.

The Giant Cinnamon Scroll Cake takes that same combination and gives it a birthday-sized makeover. Designed to be shared, it’s made for everything from weekend gatherings and spring celebrations to office birthdays – although whether you’ll actually want to share it is another question entirely.

At 17,000-plus scrolls sold, Martha’s has clearly tapped into something Sydney loves: a pastry that feels both indulgent and comforting, with just enough of a twist to make it memorable.

And while the Giant Cinnamon Scroll Cake is a limited-edition birthday release, it seems unlikely that this will be the last time Martha’s goes big.

For those already planning their cinnamon-scroll-fuelled celebrations, pre-orders open on 15 September 2026, ahead of the cake’s official launch on 23 September. Sydney-wide delivery will be available through Send a Sweet, making it possible to have a giant, iced cinnamon scroll arrive at your door without even having to leave the house. Which, frankly, might be the best birthday present of all.

At $60, the Giant Cinnamon Scroll Cake serves up one year of Martha’s in the most fitting way possible: rolled, spiced, iced and made to share. Although with that much orange blossom icing involved, “made to share” is technically just a suggestion.
